Chic Chicken Liver Mousse, and a U$D 75 Giveaway !!!



I don't know why it is increasingly harder to find good, home-made chicken liver mousse or pâté....yet for brunch, as an appetizer....while waiting for our meal to be ready....there is nothing as delicious (to me) than creamy chicken liver pate on a crispy piece of bread!



Here with you today, two versions! the typical "campagne" (country) thing, and its "chic" version...as we used to prepare at the Caesar Park Hotel, Buenos Aires.... 




Each person has his little glass...and somewhere on the table, a nice basket with toasted pieces of bread, mini bruschettas or grissini.... the red currants add color, sophistication....As for the wine pairing, I suggest here a Monbazillac, a sweet wine from the South West of France...Ah, I forgot to say making this mousse is super-easy, so....no excuses!!

To make this Chicken Liver Mousse, you will need:


 *chicken livers, trimmed, 500gr
 *salty butter, at room temperature,  250gr
 *dry white wine, 150ml
 *port wine, 3 tablespoons
 *nutmeg, 1 pinch
 *pink peppercorn
 *salt & pepper (freshly ground)
 *red currants (for decoration)


Cut the livers in halves. Put them in a saucepan with the white wine over medium heat. Let it simmer for 7/8'. Place the livers in a strainer. Let cool. Then, put the livers in a food-processor, together with the butter, previously cut in pieces, the port wine, nutmeg and a bit of salt, and pepper. Process by giving short pulses (we don't want the mixture to heat here!) until you get a silky, smooth cream. Rectify seasoning if necessary. Put the mousse in ramekins. Cover with plastic wrap. Refrigerate for, at least, 10 hours. Sprinkle with freshly crushed pink peppercorns, and serve with toasted bread.
For the "chic" version, with the help of a piping bag, fill the little glasses, cover with plastic wrap, refrigerate 10 hours, decorate with red currants.

How lovely, Cristina! I adore your presentation. The currants give the (ever unphotogenic) chicken livers exactly the right punch of color. You have such a brilliant eye for color and design.
I actually order this dish every time we visit our favorite restaurant in Miami, Michaels Genuine. So I am a fan to begin with.

I love the glasses- perfect to serve the various verrines I have come to love making.

Yes, I know chicken liver is not very "popular"... but I try to post varied things, that I feel are good...even if I know I will be less "successful". Posting desserts all the time would assure me more clicks...but that's not my style...I try to show everything about cooking...!

This looks beautiful! And very delicious!!
Such a different presentation for pate and I LOVE it! The currants add such dash and style. Liver pate on toast is dangerous for me - many times I have tumbled out of a diet because I am at the deli counter and a huge bowl of pate stares at me. Then I walk past the boulangerie and I smell bread still baking in the ovens. Sadly I will never learn *sigh* Montbazillac with this pate - magnifique!

I am crazy for those linen "torchons" with the red stripe.. they are super and very sought after in England..only by people in the know like us hahah.
I have one at home that is my favourite and comes on display at Christmas time only for decoration! You have to see the face of surprise of a relative that was visiting a couple of xmas ago when I screamed with pain at the sight of her trying to use it to dry a dish!!.. well only ladies in the know like us understand what I mean!

I bought that "torchon" in the Marché de Puces, St Ouen, here in Paris...It is not an Ikea torchon, and just like you, I would be ready to cry if someone tried to clean her dirty hands with it (although this is what originally "torchons" are made for!!!)
